I organized this post to be as helpful as possible to new players looking for a guide to ships. It's also a guide to shipbuilders looking for a popular ship list to build for ducats.
So I'll lay out what I think are decent ship choices and what levels you should work out first.

The Importance of Levels
First of all, your levels define what ship you may or may not sail.So I'll lay out what I think are decent ship choices and what levels you should work out first.
A note about Premium / UWC Ships
Premium ships have reduced level requirements, usually half of the requirements of its FS "clone". Most of them are under lvl 40 requirement which is pretty low.
If you have the real world money (or the will) to buy these cash ships you will be skipping a lot of money / level grind (And helping the developers).
It's also worth noting that there are plenty of FS ships that are superior to premium ships (Different ship classes taken into consideration). So don't assume a UWC ship will always be better.
Trader's Path
Most will start as traders as it is the profession that makes the most money in game.
Early Game
You don't really need to earn money, levels or skills until you complete your school quests in Sagres.
(Note: Just get the job done).

Get the graduation polacca ship from the final exam chest (comes in a ticket inside the chest).
Make sure you have the level to sail it or work on it.
Aides and alts:
Mid Game
In this stage you should start working on your levels in order to continually obtain better ships.
Here are a few ships you may sail (in my order of preference):
Some alternative ships you may use (Usually the time consuming path):
- Graduation Sambuk (21/0/0), if you complete the adventurer's school
- Flemish Galleon (16/37/16), has interesting ship skills for traders
- Trading Large Galleon (20/44/20), popular in the past but almost obsoleted by the clermont
